#11 Italian Sub Stoup and Garlic Toast Floaters


This recipe was meant just as it sounds. It is an Italian sub sandwich turned into a soup. If you get this recipe from her website don't put in any extra salt because it has sausage, pepperoni, and ham in it, so it doesn't need any more. I LOVED IT! It was easy and quick and tasted awesome. Lots of flavor! Only one pot, so very little clean up. I got ciabatta bread to make the garlic toast thingies but they molded before today, so I just used store bought croutons. Basically the same thing, just not homemade. Those tiny shell pastas work really well in soups and they are cute too! I never knew you could put lettuce in something hot. I always thought greens like that couldn't hold their shape and texture in those temperatures. But using greens like Arugula(what I used), Spinach, Kale, Chard those really leafy greens with thick stems hold up nicely and don't slime up on you. All of these recipes you can find on her website.
