Manchago cheese is a sheep's milk from Spain in a region called La Mancha close to Madrid. It is firm and compact with a white or off-white color. It has a beige or dark grey unedible rind. The taste is buttery and and distinct but not too strong as long as you don't mind the aftertaste of sheep. It is aged anywhere from two months to two years. It is sold in wheels and ranges from a price of $10 to 16$ a pound. Pricey! I used this cheese in a dish a while back and noticed it's nutty flavor, you can use extra sharp cheddar cheese as a substitute. And can be used in almost anything.
