#6 Tex-Mex Mac-n- Cheddar with Beef and Peppers


Because the next few are macaroni and cheese variations, I will come back to the other two later in the book. As you can see from the picture, a few things went wrong tonight. My cheese decided to curdle on me, and then proceeded to latch on to the ground beef like a scared child! I couldn't figure out what happened. If this has ever happened to anyone let me know what I did wrong. Everything was going fine until I tried to melt the cheese into the white sauce, and it all curdled up on me and I have clumps of white cheddar and random juice that won't incorporate. Was the temperature too high? Was the cheese bad? Who knows. What I DO know is that Justin's reaction to this dish tonight was as follows....."This is very odd." And I had to hold my head high and say just what you are supposed to say when you botch something....."Thank you." And that's that!

    Your hair is so cute. Alyssa is sipping out of a straw?!!! So awesome! I LOVE Gouda....it reminds me of my days in Berlin. Do you love the nikon? I could never go back!
