#20 Black Bean Stoup and Southwestern Monte Cristos


I will copy the link for the recipe, but I am not sure who will like it. It had 3 cans of black beans in it. The third can you mash it into refried beans and mix it into the soup. So, you can imagine how starchy it is. It's very hot and loaded with tasty veggies, but I didn't care for it. The Monte Cristos taste great, but turned on the inside, I'm not sure how I could've prevented that. You spread taco/chipotle sauce on the bread, then layer with ham, pepper jack cheese, and turkey. Then continue as you would for Monte Cristos, dip the whole sammy into the egg mixture and fry like french toast. So, if anyone knows how to keep the inside from getting soggy, let me know.

  1. The soups looks yummy though. Maybe just less beans? I love a hot sandwich too. I really want to come over for dinner soon :)
