#29 Beef and Chicken Fajita Burgers


I skipped a few recipes but I will go back and do #26 next, and then keep continuing through the book. This recipe was supposed to be accompanied by seared peppers and onions, so I made fries instead! =) I am so stinkin' sick of peppers in EVERY RECIPE. She seriously puts them in anything. They should change the rhyme from "Peter Piper" to:

"Rachael Ray, picked a peck of pickled peppers

And fed them to her pickled peppered people."


I am taking a break from bell peppers and any other peppers of any kind for awhile. So, as you can see from the picture, I did my own spin in this dinner, I just kept them regular burgers and I made them mini burgers, Rachael calls them "sliders". They are the perfect size, because you can have that second one you want without getting too full. The picture doesn't have any of the lettuce or cheese because she didn't have it in her recipe. It was just beef and buns. Surprisingly she didn't even have oats or bread crumbs in the meat. I was afraid it wouldn't stick together, so I put rolled oats in and I am glad I did. I have a feeling this was supposed to be a very different burger than it turned out.

  1. she also loves parsley in everything! pretty sure there is a reason it is used as a garnish, yuck!
