#53 Eggs-traordinary Stuffed Toasty Baskets


Yeah, that's a cheesy title. She's got a lot of those in there. This one was really good as long as I didn't put any of the weird stuff in it. My friend was making fun of me yesterday because she said I was changing all of my "Rachael Ray" recipes! But, I seriously have to! We gotta eat, right? I just don't do weird stuff. I shouldv'e done a Paula Deen/Rachel Adventure. But since I'm not, you can plan on me changing some of her recipes a little to make it more palatable for my family. So, Shannon........ready? This dish was great as long as I only put in the eggs and the bacon! There was a lot of other ingredients that kinda didn't make it into the soupot today! =) You stuff a piece of bread into a muffin tin, and crack an egg in there with some bacon on top. You can put whatever you want on top. Ham, sausage, cheese, whatever you would want in a breakfast burrito. and bake it until the egg is set and cooked to how you like it. The picture didn't turn out at all, and I forgot to take a picture of one cut open, it looked really cool! So, maybe Bree or Emily could try this and take a picture of the inside and post it so I can see!

  1. Hey Rachel! We love a variation of this, you put canadian bacon or ham in the muffin tin, then crack an egg in then top it off with blueberry muffin dough (already made from directions on the box) and cook till the egg is done about 15 minutes! it is one of my favorite breakfasts! I also will crack an egg on top of waffle mix in the waffle maker and close the lid. that's good too! Love ya! Heidi
