#55 Halibut Soup




You HAVE to try this one! Couldn't find the link, so let me know if you want it. This is the first time in awhile that I've followed her recipe to the "t", and the flavor was phenomenal! There are some weird ingredients, such as chorizo, poblano pepper, hominy, and the halibut of course. But, oh baby it was sooooo good!!!!! I had my dad come over and make it with me, because I wasn't sure how we would like it, and I've never had halibut, or cod before, and I needed someone to take the leftovers home. The coolest part was that in the end, you cut the fish into chunks and put it into the soup, and let it poach and it only takes 3 minutes and the fish is totally cooked and flaky and ready to delve into. She put a Mexican spin on it, so it was garnished with cilantro, and lime juice at the end, which gave it the kick it needed to make it so fantastic. The juice from the soup was perfectly tangy. My dad tasted the soup in the middle of making it, and he said it was pretty hot, but after adding the hominy, it wasn't so hot anymore, so we think the starch from the hominy buffered and soaked in the heat. So thanks Dad for coming, and bringing half the ingredients. I had a blast with you. Looking forward to cooking together again on recipe #64! Love you.
