Ice Cube Fat Skimmer

My mother gave me a subscription to Cuisine at Home and it came with a huge book of cooking tips that I have used and they work great. Here is one: Ice Cube Fat Skimmer-when you make gravy, stock, soup, or any sauce with unwanted fat, you always have to chill it completely in the fridge so that the fat can solidify on the top. If you don't want to wait, here's what you can do, and you can do this, the second you are done cooking whatever it is you a making. Take cheesecloth and fill it with ice cubes and wrap it up like a tea bag, then simply dunk the cheesecloth bundle into the pot or bowl, or whatever, and the coldness from the ice solidifies the fat and sticks to the ice bag on contact. Lift the bundle out and all the fat has stuck to it, and it's not in your food anymore! Nice!
