
So, you heard my vent about the dish with the smoked Gouda. Well, I have never had/purchased it up until that point, so this is my next cheese post. Smoked Gouda makes your whole house smell like a campfire for the next two days. It tastes and smells amazing as long as you are not suffering through morning sickness. No, this is not an announcement. I just happened to be a little nauseous the day I cooked with it, and I was on the verge of yakking the whole time from the smell. It is a cheese that is easy to find, however I had to special order it from the grocery store because they were out, and it was a little less than $7 for about 8oz. It is great to spice up Mac-n-Cheese, or grated on top of chili. But like I said before, it's takes a lot for that dog to melt. So, this cheese might be better suited for just snacking with crackers, or something like that. I made grilled cheese with it, and AFTER I grilled it, and AFTER I put it in the microwave for 30 seconds, then it started to melt a little bit, but it still held it's shape. It has an edible rust colored rind, that I chose to take off, it had a metallic taste I didn't care for. It comes from Holland and is smoked over ancient brick ovens over smoldering hickory chip embers. Which is probably why it smelled like the house was deliciously on fire!
