#65 Uptown Down-Home Chili & # 66 Chipotle Chili Mac











I combined these two recipes since they used all the same ingredients and we had company. So, things I learned tonight. Canned chipotle peppers in adobo sauce are hot! Not hot like sexy, hot like tongue on fire. Hot even hot for manly men! But, they add amazing flavor, so next time, maybe I will put them in whole and take them out before serving, see if that helps. So, this chili had lots of veggies, mushrooms, tomatoes and ground beef, and the topping was....yours truly, my beloved smoked Gouda! With recipe number 66, she used almost the same ingredients and tossed it with pasta and a cheese on top to make a killa' casserole. I realized that you can pretty much take any leftovers (well, not any) and make a casserole out of it, by simply adding pasta and cheese! Who doesn't love that! Enjoy the pics!
