
It's been a while since I posted about a new cheese. I used blue cheese in a salad for recipe #38. That was my first experience cooking with it. Totally acquired taste. I can almost see what people like about it, it's very pungent and distinct (emphasis on the "stinc"). Blue cheese might also be spelled Bleu Cheese. It is "cow, sheep or goat's milk that is injected with penicillin cultures, and that is what causes the blueish, greenish, grayish color veined through the cheese". And from what I read, yes it is mold. Edible mold???? The bacteria cultured to make this type of cheese can cause foot odor, so don't eat it if you are going to take your socks and shoes off soon after! You can buy it in a wedge or in crumbled tubs ranging of about a little less than $4 for 6 oz. Gorgonzola is a type of blue cheese, in case you were wondering. The best way people eat this in crumbled over dishes/salads, melted on burgers, or whisked into dressings/sauces. Apparently this type of cheese making was discovered by accident. It is made in caves where it's dark, damp, and temperature controlled. Now that I know what that blue stuff is, I'm not so sure I want my kids eating blatant mold. But, you go right ahead. =)
